I received an email notifying me that they are actively working on getting us inside the school building. That is good because it is too dark at 6am. Stocking Up
Most every grocery store company operating in Utah is having a "Case Lot" sale this week or some other great deal on canned soup and other foods. Check Pinching Your Pennies local ads.
I stopped by Albertsons this week to buy Campbell's tomato and chicken noodle soup priced at 50 cents each. V8 Splash is on sale for $2 per bottle. Albertsons has a Campbell's promotion this week that gives you a $5 Catalina coupon (store credit good on a future in-store purchase) when you spend a minimum of $15 on a selected group of Campbell's products. I used Campbell's coupons, SS 9/13, good for 40 cents off four & 40 cents off 2 and $1/2 on my V8 Splash, also SS 9/13. (I get multiple Sunday newspapers at home, so I had plenty of coupons!) I had two transactions to get two $5 Catalina, I used one on my second transaction and I have one for use on a future trip.
Smith's also has a promotion this week that provides an extra $5 off when you buy any 10 "participating" Nestle or Kraft products. You can get some good deals by combining this promotion with coupons.

Mortgage Rates at Three-Month Low
Once again, borrowers are getting home loan rates of 5 percent or lower. Mortgage company Freddie Mac said average rates for 30-year mortgages declined slightly to 5.04 percent in the week that ended Sept. 17. That's the lowest average since the end of May and about three-quarters of 1 percent lower than one year ago. Read more here.

Easy, Inexpensive Dinner
I have this standard meal that I make several times a month because it is easy, cheap, and my family eats it up.
Here is the basics to my recipe:
Dehydrated Refried Beans, 2c. boiling water to 3c dehydrated beans
1lb cooked ground beef
shredded cheese
tortillas
taco seasoning, salsa, can of green chilies, or enchilada sauce
I make it different every time so that it doesn't feel like a repeat from the previous time. Also, add more refried beans if you need to make this stretch further.
I add the beans and meat together with which ever seasoning I am using. If I'm using enchilada sauce then i add just a bit of it is all.
Version #1
I will roll tortillas, corn or flour, with the meat mixture and some cheese then place in my pan. When all of the tortillas are rolled I will smother them with enchilada sauce. I will smother them in my homemade green tomato salsa sometimes.
Version #2
Place all of the ingredients out in their individual bowls and let everyone make their own 'taco/burrito'. Crispy taco shells or pre-fried corn tortillas are good with this version.
Version #3
I make this like a layered mexican lasagna. I put some of the enchilada sauce on the bottom of my sprayed pan. I then proceed to layer tortillas (ripped into smaller pieces), the meat mixture, sauce, and cheese. I have my top layer be more of the ripped tortillas and then smother it with more sauce and cheese.
Each of these versions are baked in my 350 degree oven for about 20 minutes to melt the cheese and let the tortillas absorb the sauce. Serve with a green salad, chips and salsa, and some fruit and I have a happy family every time.
I have thought of trying it with tortilla chips as well. Be creative and make it fit your families taste buds. This is a good make a day ahead of a busy day and then just pop it in the oven the day you need it. Enjoy!

In separate pan:
1 1/2 c. oil
1 heaping cup of flour
- Stir bringing to a boil. Add to sauce.
Water bath quarts & pints for 20 minutes.
It is yummy! I used half of the chili powder because that was all I had. Then when I tasted it I knew that was all the heat, with the jalapenos, that my daughter would be able to take. I always have Tabasco sauce sitting out for the guys any way.

Home buyers snatching $4,000 grants
It's been a week since Utah announced it is offering $4,000 grants to new home buyers in an effort to help boost housing sales in the state. There were 1,950 grants available, but in the last week 18 of those grants have been spoken for. Earlier this year, the state offered new home buyers $6,000 grants, but they went quickly and many who wanted the incentive were turned away. It will be interesting to see how long this new round of money lasts. Go here to read details about the program.
There is still an $8,000 federal incentive for first-time buyers or those who haven't owned a home in the past three years. But that program will disappear by Dec. 1. For more information, read this.

Paying Too Much For Prescriptions?
For the past 16 years I have taken a pill every day and I will for the rest of my life. No big deal, it is for my thyroid. It is such a common part of my life that I don't think about it too much. I also really like my small town pharmacy so I haven't paid too much attention to the ads for 90 days refills for $10 on generic medicines. $10 happens to be the price I pay each month for my monthly supply. Hmm, $10 a month vs. $10 for three months. I'm slow but I do eventually catch on.

WOW - The Day is Done
What a crazy busy day from sun up to sun down. I know you all understand because you live those lives too. I have been getting tomatoes bottled in all forms. The spaghetti sauce turned out yummy! I just put onions, garlic, zucchini, carrots, and other veggies from the garden into the pot with my tomatoes and let them cook down, pureed it all and then added seasonings to taste. It is fabulous but I only had enough for three quarts, this happens about every three days. I'm grateful, not complaining a bit.
Hang on to your hats, tomorrow is another day full of fun:)

Smith's NEW Rewards Program!
Smith's Food & Drug is rolling out a new-to-Utah rewards program starting tomorrow, September 9th! Customers will be asked to make the switch to the new rewards card from the old Fresh Values card program; bonus points for those who do switch are available through Sept. 26. There will be a table at the front of the store with all information and the new cards.
Shoppers can earn one point for each dollar they spend, excluding purchases of tobacco, alcohol, fuel and prescriptions. Once they have accumulated 500 points, they qualify for a $5 reward certificate good on any in-store purchase. Each additional 100 points is worth $1. Rewards certificates are mailed quarterly. Customers can earn up to $250 per quarter. There will be a number of opportunities to earn bonus points on select items. If you don't accumulate enough points in a quarter, they will roll over to the next quarter. However, at the end of the year, any remaining points are erased. Your points total will appear at the bottom of your receipt. For more information about the program, go here.
Shoppers can elect to stick with their old Fresh Values cards, which provided discounts on items in the store, or switch to the new reward cards, which provide the same discounts plus the rewards. Enrollment is free in either program.
