Make Fakin’ and Eggs this April Fool’s Day
On April Fools’ Day, trick your family with a tiny breakfast that’s really a cleverly disguised dessert: Fakin’ and Eggs from Disney Family Fun Magazine!
Ingredients
FOR THE EGGS:
· 3 tablespoons white chocolate chips
· 12 yellow M&MS
FOR THE FAKIN’:
· 1 square caramel
· 1 Tootsie Roll Midgee
Instructions
1. For the eggs: Melt the white chocolate chips according to the package directions. Transfer the melted chocolate to a ziplock bag and snip off a corner.
2. Squeeze nickel-size portions of the chocolate onto a sheet of waxed paper, then gently press a yellow M&M, letter side down, into the center of each. Let the candies cool. Makes 12 eggs.
3. For the fakin’: Remove the wrapping from a square caramel and a Tootsie Roll Midgee. Microwave the candies for 4 seconds to make them soft. Use your thumb and forefinger to slightly flatten each candy piece, then press them together.
4. Halve the candy, then stack and press the pieces into alternating layers.
5. Slice a 1/4-inch-wide piece from the stack. Pinch and stretch the piece lengthwise into a flat bacon strip, then cut it in half. Add ripples to each half by gently bending the edges. Makes 3 strips (6 pieces).

Reed's Pharmacy
Ginger received a letter from Reed's Pharmacy, located at 790 E Main St in Hyrum. They were making sure she was aware that they can match other pharmacy prices. They do have great personalized service and they deliver medications free of charge! They also have a drive-thru window for those moments in life when you just don't want to get out of your vehicle.
They offer over-the-counter medications as well. Their gift selections with candles, crafts, Willow Tree angels and LDS items are great. They also rent DVD's, make copies, provide fax services, fill helium balloons, rent carpet cleaners, and have a UPS counter to help with your shipping needs,
I personally like having the convenience of having the local businesses in our community and want to remind everyone to support your local businesses to keep them thriving.

Jenson Books
Kristine at work was telling us of a great new used book store in Logan, Jenson Books. You walk into this warehouse style store filled with books. You grab a grocery sized bag and fill it for $7, you must be able to hold the handles together is the only rules for filling your bag. You can purchase individual books for $2 per hardback and $1 for paperbacks and children's books. They put new books out daily, or at least every other day.
They are located at 1766 S. 400 W. You turn at S.E.I., directly behind pallets of Utah. You can see a map online HERE. They have a Facebook page to get updates. On their site, jensonbooksonline.com, you can type in a book to see if they currently have it. I typed in an author, Marcia Lynn McClure, they did not show her in their online inventory but I was able to let them know that I am interested in any of her books if they come across them.
I think this will be a great place to grab books for summer reading, of course along with your library books.
Rumbi Island Grill Opening in Logan
I have eaten at Rumbi Island Grill in Salt Lake a couple of times many years ago. I don't remember which salad I ordered, I do remember I really enjoyed it. Rumbi is opening in Logan on Friday, April 2nd. On Friday you can get a free rice bowl 11am - 2pm. Their grand opening is on Saturday, April 3rd. Saturday will be filed with a ribbon cutting ceremony, light the torches at dusk, live local entertainment, meet USU coaches, Coupons for future Rumbi events, free prizes, prize wheel, & live radio broadcast. They are located at 970 S. Main, next to Walmart and Old Grist Mill. The handout states that kids eat free on Mondays.

The Perfect Hard Boiled Egg
I am home today and while watching Good Things Utah I saw a segment on how to get the perfect hard boiled egg. I'm sure many of us are going to be boiling eggs this week for Easter so I wanted to pass along what I learned today. They also have a recipe for Sampan's Sweet and Sour Sauce. I love a good sweet & sour sauce and I have ruined meals before with a bad sweet & sour sauce. This one is a signature sauce at Sampan's, which I have never tried, so I am going to be using it this week.

Peanut Butter Playdough
I love peanut butter. Therefore, I love peanut butter playdough. It is an activity and a treat all in one. It is loved by the young and the not so young. If you are in need of an activity/treat try this recipe if you do not already have it:
Peanut Butter Playdough
1/3 c. honey
1/2c. peanut butter
1/2c. powdered milk
Mix well & have fun!
I also love that these are all items I like to have in my food storage. My heart goes out to you if you are allergic to peanut butter and I think you might need your head checked by a professional if you just don't like it! I am married to one who needs a professional check up.

Zuppa Toscana Soup Recipe

Did you use your kale from last weeks basket? Click HERE for nutrition info on this super food. The only recipe I have ever used kale in is Zuppa Toscana Soup. There are many recipes for this soup online. HERE is the one I used. I don't use sausage and bacon bits, I use Farmland brand pork & bacon flavored sausage and my family enjoys it. My eight year-old wasn't too sure of the purple leaves in her soup. Seriously, the kale took on the flavors of the soup. It was delicious. I hope you enjoy.

Bountiful Baskets - Time to Order

I was in Kmart yesterday and they have posted that they are not accepting the $10 off of $20 coupon. They had theses coupons mailed out to customers and the coupon somehow got out on the internet for anyone to use so they are now void.

Yummy Cookie Recipes
I LOVE cookies. I will not walk away from a warm, fresh out of the oven cookie. They truly are my Achilles' heel. I am sharing a couple of new cookie recipes that I have been given this past week. I hope that you all love cookies too.
The first one was passed onto me from my good friend Ginger. I haven't made them yet, but I can already tell they are going to be a favorite. Oatmeal, butter, brown sugar, and almonds . . . yummmm!
Oatmeal Cookies (Sister Loren C. Dunn)
Cream:
1 pound butter
2 Cup Sugar
4 Eggs
2 Cups Brown Sugar
Add:
2 tsp Baking Powder
2 tsp Vanilla
2 tsp Soda
4 ½ Cups Flour
Stir in:
3 Cups Quick Oats
1 8oz Almond Hershey Bar, broken into pieces
1 pkg. Chocolate Chips
May add:
1 ½ Cups Raisins
1 ½ Cups Nuts
Bake at 400* for 10 minutes. DO NOT OVERBAKE
This second recipe my daughter brought over on Sunday. Soooo rich and delicious noone was stopping at one or two or three, okay you get the point.
1 pkg of Oreos, I know cookies in a cookie recipe?
8oz cream cheese
chocolate for dipping
Crush the entire bag of Oreos. Mix in the cream cheese. Scoop into a ball, you decide the size. Place on baking sheet lined with wax paper and place in the freezer to set. Once they are frozen and your chocolate is melted take your Oreo nuggets and dip the entire cookie in chocolate and let set up. They are that simple.
My daughter did regular Oreos with white chocolate. You can create whatever combination you can dream up. Mint chocolate, vanilla Oreos, I want a peanut butter chocolate variety.
She told me that she bought a chunk of white dipping chocolate and used half of it? Not sure the exact poundage, but I'm thinking one bag of chips may not be enough. She made forty of them. I only wish we had taken a picture of them!

The Princess & The Frog - Released Today

You may still want to consider getting this pack anyway. With the Disney Combo Pack you get not only the Blu-ray disc, but you also get a DVD and a digital copy. Remember eight track tapes? Sausage Pockets Recipe
Saturday, while we were picking up our Bountiful Baskets, we were talking about the cabbage in our baskets. My good friend April was telling us of these pizza pockets that she makes using shredded cabbage. I thought they sounded good and that my family would eat them and asked for her recipe. Here it is:
Sausage Pockets
1 lb. sausage, browned
1 c mozzarella cheese
1 c shredded cabbage
1 can tomato sauce
Combine together. Roll out a small piece of dough. Put a scoop of mixture in. Fold over and seal. Poke small holes in top with a fork. Bake at 350 until bread is a golden brown. ENJOY!! (They also freeze well.)

Odering Day for Bountiful Baskets
Last week was filled with the site crashing, very slow navigation, and not being able to order breads or any of the other extras. Let's cross our fingers that this week goes a bit smoother.
If you are new to this site and are unsure what Bountiful Baskets is let me give you a brief run down. It is a produce co-op that enables us to get the same produce you get at your grocery store without the mark up the stores give us. Through mass buying power we get a fresh mix of fruits and vegetables to help our families eat healthy. You order on any Monday that you wish and pick up your basket on Saturday at a designated site and time. This operation does run on volunteers, to keep our costs down. You can show up an hour an ten minutes before your scheduled pick up time and help unload the truck, distribute produce in baskets, take out the boxes and garbage, you can stay through the pick up process as well. You do not need to help every Saturday, but when you can it is greatly appreciated.

Spring Break Staycation
I listen to two moms this morning talking about school being out. One said she was ready for school to be over and the other said she isn't looking forward to the boredom that comes with summer. It got me thinking about the week off for spring break that is approaching. I have been looking through several sites and found some good ideas for our spring break.
Here are some of my favorites:
1. Get Crafty. Plan a kid's craft day. Keep in mind the age of your children when choosing the craft to complete. Little ones can engage on coloring pages while the older ones can concentrate on slightly more difficult kid's crafts.
2. Get Cooking. Have a pizza-making cooking class at home. Kids will love kneading the dough and personalizing their own pizza. Let them add toppings of their choice, and get dinner ready at the same time. Bake everyone's favorite cookies or pick another country or state you would like to visit and cook some of the local food from that place.
Have your kids make menus, set the table like being at a restaurant, dress up like a server, and serve the family dinner.
3. Hold a board game marathon! Make game time fun by planning ahead and choosing inexpensive prizes for the board game winners. Be sure to have games that appeal to every age and include games that anyone can win. But if you don't have a lot of board games on hand, visit your local thrift store. I have always found a healthy supply of board games at my local store.
4. Pajama Day Movies. Pick a day during the week and stay in your pajamas all day long watching movies. Host a movie marathon where everyone in the family gets to choose their favorite movie to watch. Make some popcorn or set up an ice cream sundae bar. Invite some of your kids friends over and just enjoy relaxing. For even more movie watching fun, set up a tent in the family room and let the kids watch from their sleeping bags. Watch home movies if you have them. Kids love seeing themselves on film.

5. Camping in the Great Indoors: Speaking of setting up the tent, why not camp indoors for some unusual fun? You can make s'mores in the fireplace or over the stove top, sleep in a tent and sleeping bag, and stay up telling stories by flashlight - all in the comfort of your own home.
6. Be a tourist in your own town. Are there attractions that you have never been to in your own city that people come to visit and you have never visited yourself? This is a perfect opportunity to get out and visit them.
You can take a camera, take lots of pictures, then put an album together of your day. In Cache Valley we have free public transit, take advantage of getting around without expense. Kids will find it an adventure to get around on the bus system.
7. Fitness activities. Bowling, skating, indoor pools,jumping jack contest, hula hooping, games like red light green light or red rover, and rock climbing. If the weather is okay, take the dog for a walk at the dog park and look for signs of spring.
8. Spring clean. Use this time to tackle some of the projects that you never seem to get to. Schedule a time to clean out your kids rooms with them or organize your photographs. Give your children an assignment that they can be proud of helping you accomplish.
9. Consider volunteering with your children. If there is a charitable organization that you are particularly interested in, give them a ring and ask them how you and your family can help. Imagine the example you are setting for your children and the memories your will make.
10. Road Trip to Family. Some of us are lucky enough to live within a day drive of family. If you do, consider planning a trip. Go to grandmas and do all the same local tourist and museum stuff there-it will be totally new and different!
11. Find a great book that the entire family will enjoy and take turns reading, or read to them. Imagination is a great thing and reading helps develop imagination. I highly recommend Fablehaven if you have not already read it.
Set aside designated times that you will have the phones turned off too and enjoy your family. Take pictures and videos of this time.
KMart Double Coupon Event
KMart has made a list of participating stores available and 15 Utah stores are participating, including Logan! I am surprised because we get left out of a lot of big promos.
Coupon doubling will be one week starting April 4th. I will keep watching for details of this promotion. In the past when we have seen coupon doubling being offered by a company there has been a cap on the doubling amount. Stay tuned and I'll post the details as soon as I learn them.
